GRAN’S HONEY JOYS

When life gives you joy, why not add some honey?
Every party needs a sweet little treat, and these honey joys are a certified staple at every family gathering I have ever attended on my dad’s side—courtesy of my grandmother, of course. As someone who has moved across the country to pursue education, I often find myself craving those very parties where I would get the chance to nibble on one of these delicious snacks and engage in some good old-fashioned family gossip.
If you miss authentic honey joys and want to know what the classic Aussies are raving about or are simply someone who needs an excuse to intake some sugary goodness without all the hassle of waiting for a cake to bake, here’s your ticket to making my gran’s honey joys.
Ingredients:
● 180g butter
● 130g sugar
● 115g honey
● 8 cups cornflakes
Method:
Preheat your oven to 160°C for 10 minutes. Make sure your fan force is on!
Combine the butter, sugar and honey in a microwave-safe container and stir it well until everything is properly incorporated. Once you are satisfied with the mixture, pop that container into the microwave in 2-minute increments, taking it out and giving it a stir before putting it back inside half-way through (this is to make sure the mixture doesn’t burn). Your aim is to make sure the sugar completely dissolves.
Line a separate tray with baking paper or prepare a bowl if you don’t have one. Spread out your cornflakes on the tray or bowl and carefully pour the heated mixture over them. Make sure they’re all covered well. If you run out of mixture, you can stir the cornflakes together to ensure everything gets that iconic glossy shine.
Once you are satisfied with how your cornflakes look, scoop them into a patty cake pan in a lined cupcake tin. You can also choose to bake them on the same tray by either separating them into sections or you can have one big mass too! Go wild.
Place your honey joys into the preheated oven for 10 minutes or until they are crispy and golden.
These honey joys can be served either warm or cool, whatever you prefer. That’s what makes them so great! They’re the perfect way to treat yourself if you’re the kind of person to scurry around your kitchen at midnight and are a surefire way to liven up your snack table if you’re hosting a party.
